The Original Oyster House has added Bill-E’s Small Batch Bacon to popular picks on its new menu including its award winning Fire-Grilled Oysters.

William Stitt, owner of Fairhope’s Old 27 Grill, expertly prepares his Bill-E’s Small Batch Bacon for the Original Oyster House in Gulf Shores and on the Mobile Causeway. Stitt specializes in charcuterie and explains his process of curing his very popular Bill-E’s Bacon.

“I work with about 25 small family farms that deliver fresh pork bellies of uncommon quality, flavor and versatility. The never frozen premium bellies are brined in salt, brown sugar and real molasses, then cured for eight days, cold smoked using hickory wood and serenaded by our local songwriters in Fairhope, Alabama. Bill-E’s Small Batch Bacon has no added preservatives, fillers or flavoring solutions of any kind,” explained Stitt.

“We added Bill-E’s bacon to favorite items including our signature Fire-Grilled Oysters. We layer slabs of bacon on top of fresh Gulf oysters that are already topped with Parmesan and Ramona cheeses, add some garlic butter and flame it up. It gets nice, crispy and smoky. It’s a wonderful marriage, the oysters, bacon and cheese; it doesn’t get better than that,” claimed Joe Roszkowski, co-owner of the Original Oyster House.

Bill-E’s Bacon planks are packed full of flavor and can complement any po’boys or salad at the Original Oyster House. Some new menu hits include Captain Tobie’s Bloody Mary made with Titos Vodka and garnished with shrimp, bacon, pickled okra, olives, etc. plus Bill-E’s Bacon Planked Oysters made with planks of Bill-E’s Small Batch Bacon topped with fried oysters, rémoulade and sweet pepper sauce drizzle.
